It was a gloomy, cloudy day and Husband wanted to eat something fresh. Luckily I had Soaked Sabudana handy, and I quickly surprised him with Sabudana Vada. Here's the quick and easy recipe,
Sabudana Vada

Ingredients

- 1 Cup of Tapioca Sago / Sabudana, Roasted Peanuts, 1 Boiled Potatoes
- Coriander Leaves, Salt, Sugar, Lime, Green Chilies

Recipe

Preparations
- Soak the Tapioca / Sabudana for 3-4 hours.
- Coarsely crush the Roasted Peanuts.
- Heat Oil on a low flame, in a deep pan, for frying.
- Finely chop the Coriander Leaves and Green Chilies

- In a bowl, mix the Soaked Sabudana, Peanuts, chopped coriander leaves and green chilies.

- Add lime, salt & sugar to taste, mix it well; and add mashed boiled potatoes to the mix,

- Out of the mixture, make even sized balls,

- Slowly add the balls to the deep frying pan, and let it fry,

- On a low flame, evenly fry the Vada, for 10 minutes.

The Vada is ready, enjoy it with, Peanut Chutney or Tea.

When I am hungry but want to enjoy healthy Indian food, one of the dish I consider is anything with Rava. I love Rava Uttapam, since it take least efforts and time,
Peanut Chutney

Ingredients

- For batter: 1 Cup Semolina / Rava, 1 Cup Yogurt, Salt to taste
- For topping, I've used Onion, Tomatoes, Red & Green Bell Peppers and Coriander Leaves

- In a bowl, add Semolina, Salt & Yogurt, mix it well; add ½ cup water,

- Mix it well, make sure no lumps are there and it is not too thick or thin,

- Heat a tawa on medium flame, add oil; once it's medium hot, add batter (it should spread automatically),

- Add the topping evenly, use as less possible to ensure they are cooked,

- Add one tsp oil on the edge, let it cook for 5 minutes.
- After 5 minutes, flip it; then cook for 2 minutes face down,

- Flip again after 2 minutes and then cook for 2 more minutes,

The Crispy Rava Uttapam is ready, enjoy it with Peanut Chutney or tea.
Indian Dishes are usually accompanied by Chutney, different region or different dishes uses Chutneys of different taste and form. My husband loves 'Peanut Chutney', and he enjoys it with almost anything,
Peanut Chutney

Ingredients

- Roasted Peanuts, Onion, Tamarind Pulp, Dry Red Chilies, Turmeric Powder
- Sugar (optional), Asafoetida, Garlic & Salt

Recipe

- In a pan, heat oil and garlic, saute for a 2 mins,

- Once garlic leaves the raw smell, add chopped onion add asafoetida,

- Once onions turns translucent, add dry red chilies,

- Cook until the you see Onion turning brownish, then add roasted peanuts,

- Mix it well and add little turmeric powder, then add tamarind pulp,

- Mix well and let it cool for a while [Tip - do not wash the pan yet !],

- Throw the mix into blender and make coarse mixture (add 4 to 5 tbsp water as required),

- Heat the same pan, add the coarse mixture,

- The Peanut Chutney is ready, enjoy it with Paratha, Uttapam or as a side,

There are many variations of sandwiches, I love them but prefer healthier ones. I recently stumbled upon few vegetables in smaller quantity and was wondering what to cook, here's that Sandwich,
Toast

Ingredients

- Wheat Bread, Onion, Spring Onion, Carrot, Corn, Green Peas, Capsicum, Beetroot, Lemon, Oil
- Cumin Seeds, Turmeric Powder, Coriander Powder, Salt to taste, Pavbhaji Masala, Coriander Leaves

Recipe ~

- Heat 2 tbsp Oil in a pan,

- Add cumin seeds, let it crackle and then add onion and spring onions, saute them

- Add all the vegetables but beetroot, salt and turmeric powder, saute for 10 mins,

- Add a little water to cook it, finally add shredded beetroots. Mix it well and cook it for 2-4 minutes.
- Add Pavbhaji masala, coriander powder and lemon juice, top it with coriander leaves,

- Make coriander chutney, that you can apply on sides of breads,

- Apply butter and coriander chutney on one side of bread and add masala,

- Prepare another slice of bread with butter and chutney and add on top,

- Cook them in the sandwich maker, I prefer crisp, so I overcook it,

Enjoy the sandwich with coriander chutney and ketchup.

Dates are naturally sweet and full of nutrients, it makes a very healthy snack for Winter. This recipe along with Dates, contains Poppy seeds and nuts, which makes it rich in protein, calcium along with good dose of nutrients. One or two pieces in the morning would keep you running for entire day,
Toast

Ingredients

- Dates, Pure Ghee, Almonds, Cashew Nuts, Poppy Seeds, Shredded Coconut
Ing

Recipe ~

- Heat 2 tbsp Ghee,

- Add shredded coconut to the Ghee, cook for 1 minute until it turns slightly brown,

- Add Poppy Seeds, and cook it for 2 mins on a low flame, it would turn lightly brown,

- Add chopped Dates and mix it well, keep stirring and mash it well, on low flame,

- On another stove, heat 1/2 tbsp Ghee,

- Add chopped Almonds and Cashew Nuts, cook it on low flame for 4-5 minutes,

- Once the Dates are fully mashed, turn off the stove, let it cool down,

- Make a ball once the Mashed Dates cools down,

- Flatten the Dates ball and top it with roasted Almonds and Cashew Nuts,

- Roll it firmly,

- Roll it over the shredded coconut,

- Cut the roll in smaller pieces or you can roll them into smaller balls,

Sabudana Khichadi is a popular upvas recipe which is made on fasting days. Also it is a popular breakfast dish around Maharashtra region. Traditionally the dish is made with Potatoes, but I've skipped it to make it more healthier,
Toast

Ingredients

- Over night soaked Sabudana, Oil, Cumin Seeds, Lemon, Sugar
- Curry Leaves, Green Chili, Roasted Peanuts, Salt, Coriander

Recipe ~

- Overnight soak the Sabudana, use enough water to dip Sabudana, do not over fill the water.
- Crush the roasted peanuts, and then mix it thoroughly the Soaked Sabudana.

- Heat oil in a pan and add Cumin seeds, let it crackle,

- Add Green Chili and Curry Leaves, and add the Sabudana,

- Cook it for 5-7 minutes, later add Sugar, Salt and Lemon juice,

- Serve it Hot and enjoy it with Tea,
