Bhindi or Okra is full of nutrients and is a vegetable that can be used in various forms. It's used in Curry, Sambhar, Korma etc; I'm preparing it with Onion and various dry spices, hence calling it 'Masala Bhindi',

Ingredients
- Bhindi / Okra, Oil, Onion, Tomatoes, Garlic, Cumin Seeds, Fenugreek Seeds, Asafoetida
- Garam Masala, Coriander Powder, Red Chilli Powder, Turmeric Powder & Salt

Recipe
- In a pan, heat oil, add asafoetida, fenugreek seeds, cumin seeds and garlic, saute for a 2 mins,

- Once garlic leaves the raw smell, add chopped onion,

- Once onions turns transluecent, add Bhindi,

- Cook until the you see Onion and/or Bhindi turning brownish,

- Add tomatoes, red chilli powder, turmeric powder, garam masala & coriander powder, mix it well.
- Also add Garlic-Red Chilli Powder chutney to it and mix it well,

- As you see the Tomatoes turning softer/mushy, add finely chopped coriander leaves,

- Mix it well and cook it for 2-5 more minutes,

- Masala Bhindi is ready, enjoy it with fresh Fulka Roties or as a side,

Daal Tadka probably doesn't need any introduction, it's very popular dish that you'd find almost in any Indian restaurants. There are several variations and everyone likes them their own way, let's see,

Ingredients
- Daal: Tuar (Pigeon Pea), Masoor (Red Lentil), Urad (Black Gram), Chana (Bengal Gram)
- Ghee (Clarified Butter), Cumin Seeds, Mustard Seeds, Bay Leaf, Green Chili, Curry Leaves, Onion
- Asafoetida, Ginger, Garam Masala, Coriander Powder, Red Chili Powder, Turmeric Powder & Salt

Recipe
- Mix equal amount of Tuar Daal, Masoor Daal, Urad Daal and Chana Daal.
- Add all the Daal, and triple amount of water & Ginger into pressure cooker, cook until 4 whistle.
- In a dip pan, add Ghee,

- Add asafoetida, cumin seeds, coriander seeds, curry leaves, bay leaf and red chilies,

- Let it cook for 5 minutes, add green chilies and chopped onion,

- Once onions turns translucent, add tomatoes,

- Add rest of the dry spices and cook for 1-2 minutes,

- Add the boiled Daal mix and cook for 15 minutes,

- Add lemon and cook for 2 more minutes, top it with Coriander leaves,

- The Yellow Daal is ready to be consumed, but Tadka is not,

- For Tadka, heat oil in a pan, add cumin seeds and dry red chilies,

- Pour it on the Yellow Daal, yummy Tadka Daal is ready,

Suji Halwa is one of the most common and easiest sweet dish to prepare, let's quickly prepare it,

Ingredients
- Fine Suji, Pure Ghee, Sugar, Almonds, Cashew Nuts, Cardamom Powder, Milk

Recipe ~
- First of all, heat the ghee,

- Add Suji and mix it well, keep stirring for 10 minutes,

- Keep stirring the Suji until it is light brown,

- Add Almonds and Cashew Nuts,

- Mix it for 3-4 minutes, until they are lightly roasted,

- On another stove, heat the Milk until lukewarm,

- Add Milk to the Suji, Keep stirring for 2-3 minutes and make sure no lumps are created,

- Add Sugar and mix it well, for 1 Cup Suji add 1/2 Cup Sugar,

- Add Cardamom Powder, mix it well,

- The Suji Halwa is ready to eat,

- Serve it Hot and enjoy it with Puri or any main course,

In India, visit to restaurant is almost incomplete without Masala Papad. This recipe takes just about 5 minutes and no deep frying needed plus hardly any cooking needed, let's get started,

Ingredients
- 2 Udad Papad, 1 Tomato, 1 Onion, 1/2 Raw Mango, 1/2 Lemon
- Coriander Leaves, Chaat Masala, Mirch powder, Roasted Cumin Powder
Recipe ~
- We are not going to fry the Papad, instead prepare in Microwave. Spray oil on either side of Papad,

- Microwave the Papad for 30 seconds and then flip the side and microwave again for 30 seconds,

- Restaurant style, fried Papad is ready in just 1 minute, with just a little oil,

- Let it cool down so it would become crispy, if you want you can soak access oil,

- While the Papad cools down, let's prepare the topping by mixing rest of the ingredients,

- Spread the topping on the top of Papad and the Restaurant style Masala Papad is ready to eat,

You can choose your own toppings and add Sev or other Spices as you prefer.

Quinoa is called a 'SuperFood' and is one of the go-to ingredient for weight lose because it's extremely rich in complete protein and complex carbs. Here's Quinoa prepared Desi style with Cranberry as Pulav,

Ingredients
- 1 Cup Quinoa, 1 Carrot, 1 Onion, 1 Sereno Chilli, 2-3 Garlic Cloves
- 12-15 Dried Cranberries, 1 Cup Corn, 1 Cup Peas, 1/2 Lime, 1 tbsp Olive Oil
- 2 Cloves, 1 Cardamom, 1 Bay Leaf, 1 Cinnamon Stick
- Cumin Seeds, Turmeric Powder, Coriander Powder, Garam Masala & Salt
Recipe
- In preparation, thoroughly wash Quinoa multiple times and then soak it for 30 minutes.
- While Quinoa is soaked, in a skillet, hit Olive Oil and add Cumin Seeds.
- Further add Clove, Cardamom, Bay Leaf and Cinnamon stick. Saute it for 2-3 minutes.
- Add mashed or finely chopped Garlic Cloves, finely chopped Onion and Chilli. Saute it for 2 minutes.

- Add Cranberries, Corn, Peas and Carrot; mix it well and saute for 3-5 minutes.
- Add Turmeric Powder, Coriander Powder, Garam Masala and pinch of salt for the vegetables.
- Let if cook for 5 minutes till the vegetable is half cooked.

- Add the Quinoa and mix it well. Saute if for 2 Minutes.

- Add 3 Cups of water, Lime Juice and close the lid, cook the Quinoa for 30 minutes on low heat.
- Keep checking the Water every few minutes and add more if required.

The Pulav can be enjoyed with Curd Raita or Green Chutney or with Sauteed Broccoli as I did,

Many of us have heard enough times to consume healthy food, but it comes at the cost of flavors. Well, I've found that we can enhance the flavors of Healthy dishes with few substitutes and still enjoy them with their health benefits. Here's my take on Crunchy Asparagus & Chickpea Salad,

Crunchy Asparagus
Ingredients
- Bunch of Asparagus (15-20), Garlic, 1 tbsp Olive Oil, Lemon, Salt & Pepper

Recipe
- As preparation, coarsely chop Garlic and cut the Asparagus evenly.
- In a skillet, hit the oil and saute the Garlic for 3 mins or until it leaves the Raw smell.
- Add Lemon Juice and saute for one more minute.
- Next add the Asparagus; sprinkle Salt and Pepper and mix it well.
- Close the lid and cook the Asparagus for 10 minutes (sprinkle water if needed).
#Tips
- Choose thin Asparagus if available, thick ones takes longer time to cook.
- You can remove skin of the thick ones and then slit them into half if needed.
Chickpea Salad
Ingredients
- 1 Cup Chickpea, 1/4 Avocado, 1 Tomato, 1 Onion, 1 Carrot, Lemon
- Cilantro, Light Olive Oil, Cummin Powder, Garlic Powder & Salt

Recipe
- Soak the Chickpeas for some time and then pressure cook them.
- Grate the Carrots; finely chop the Avocado, Onion & Tomato.
- Once the Chickpea cools down, mix it with Avocado, Tomato, Onion & Carrot.
- Add Lemon Juice, Light Olive Oil and rest of the spices; mix it well.
- Add freshly chopped cilantro and enjoy the salad.
#Tips
- One or more kind of Bell Peppers can also be used.
- If available, Parsley will enhance the taste instead of Cilantro.
You can enjoy these dishes as Appetizers or Sides, for lunch or dinner.
