There are many variations of sandwiches, I love them but prefer healthier ones. I recently stumbled upon few vegetables in smaller quantity and was wondering what to cook, here's that Sandwich,
Toast

Ingredients

- Wheat Bread, Onion, Spring Onion, Carrot, Corn, Green Peas, Capsicum, Beetroot, Lemon, Oil
- Cumin Seeds, Turmeric Powder, Coriander Powder, Salt to taste, Pavbhaji Masala, Coriander Leaves

Recipe ~

- Heat 2 tbsp Oil in a pan,

- Add cumin seeds, let it crackle and then add onion and spring onions, saute them

- Add all the vegetables but beetroot, salt and turmeric powder, saute for 10 mins,

- Add a little water to cook it, finally add shredded beetroots. Mix it well and cook it for 2-4 minutes.
- Add Pavbhaji masala, coriander powder and lemon juice, top it with coriander leaves,

- Make coriander chutney, that you can apply on sides of breads,

- Apply butter and coriander chutney on one side of bread and add masala,

- Prepare another slice of bread with butter and chutney and add on top,

- Cook them in the sandwich maker, I prefer crisp, so I overcook it,

Enjoy the sandwich with coriander chutney and ketchup.

Many times Bread preparation are very repetitive, here's a version that's quick to prepare and can be enjoyed any season. Prepared with Raw Banana, it provides Potassium and Vitamin benefits, also this recipe can be prepared with little oil on Tawa or in Oven or traditionally can be deep fried as well,
Toast

Ingredients

- Raw Banana (Boiled), Bread Slice, Lemon, Green Chili, Coriander Leaves
- Mirch Powder, Turmeric Powder, Salt, Sugar, Chaat Masala, Garam Masala
- For plating, Sev, Dates & Tamarind Chutney, Green Chutney

Recipe ~

- First of all, cut the Banana into half and then boil them.

- Mash the boiled Bananas nicely, same as Mashed Potatoes.
- Mix the mashed banana with rest of the ingredients to make the filling,

- Spread the filling evenly on the top of Bread slices,

- Shallow fry the Bread slice with as little oil as you prefer,

- If you prefer you can deep fry them as well, the banana won't come off from Bread.

- The Hyederabadi Toast are almost ready,

- Top it with Dates & Tamarind Chutney, Green Chutney & Sev, serve it hot,

Rajgira (Amaranth) is botanically a 'non-cereal', hence can be enjoyed during fasting. Rajgira can be prepared for breads as well as curries. Here's Rajgira Paratha, which can be consumed wiith any curry during any meal or with tea at tea time. Let's enjoy it,
Paratha

Ingredients

- 1 Cup Rajgira (Amaranth) Flour, 1/2 tsp Ghee, 1/2 Cup Milk, Salt to taste

Recipe ~

- Mix Rajgira flour, milk (room temperature), ghee and salt to taste,

-Knead the dough well and prepare thick dough for bhakhri,

- Keep the dough aside for 5-8 mins.
- Prepare a small ball from the dough and flatten with rolling pin.
- On nonstick tawa, cook the paratha side-by-side with little ghee.
Paratha
Enjoy the Rajgira Paratha with Kele ki Sabji and/or Rajgira Kadhi.

When you hear Chhole, it has to go with either Bhatura or Rice. Bhaturas are made from maida and are bigger sized than puris, some are so big that one is enough for a young adult, at home usually it little smaller though,
Bhatura

Ingredients

- 1 cup all Purpose Flour, 1/4 cup of Semolina, 1/2 tsp Baking Powder
- Water, Salt, Sugar, Yogurt

Recipe ~

- Take one cup all purpose flour, add salt, sugar, 1/2 cup of baking powder and 1/4 cup of semolina; mix it well.
- Add yogurt and if needed add some water and prepare light dough.
Bhatura
- Let the dough seat for 2 hours or more.
- Kneat the dough after 2 hours and prepare the small balls.

- The balls should not have any cracks in them, otherwise it won't be fluffy.
- Roll them flat, little bigger than Puris,

- Deep fry them, maintain the heat while frying the Bhatura or it might burn,
